- 1 avocado, chopped
- 1 roma tomato, chopped
- ¼ cup corn (can also add shrimp to this) roasted in Three Farmers Roasted Garlic and Chili Camelina Oil and a dash of cayenne pepper
- ¼ cup canned black beans
- 1 tsp. minced garlic
- dash of cumin
- ½ cup quinoa
Cook the quinoa in chicken broth according to package directions. Combine all the ingredients into a bowl.
Drizzle Three Farmers Roasted Garlic and Chili Camelina Oil over mixture. Dress with chopped chives and cilantro.
Top with a couple drops of Siracha sauce and fresh lime juice. Enjoy!
