Oat Carrot and Banana Power Muffin

(Makes approx 3 dozen small muffins)

 

Ingredients

  • 3 cups flour
  • 5 cups oats
  • 1.5 tbsp baking soda
  • 1.5tbsp baking powder
  • Pinch of salt
  • 1 cup of hemp hearts
  • 4 eggs
  • 4 overripe bananas
  • 2 cup of honey
  • 1.5 cup of Three Farmers Camelina Oil
  • 1 tbsp vanilla extract
  • 3 cups of shredded carrots

 

Instructions

  • Preheat the oven to 350 degrees.
  • In a medium bowl combine the flour, oats, baking soda, baking powder, hemp and salt.
  • In a second large bowl mash the bananas and combine with eggs, honey, camelina oil and vanilla extract.
  • Add dry ingredients to the wet and mix until combined. Add carrots and mix until combined.
  • Evenly distribute the batter into lined muffin tins and bake in the oven for 20 minutes. To test doneness, insert a toothpick into the center of the muffin and when it removes it should come out clean (no batter on the toothpick).

Camelina Oatmeal Pumpkin Muffins

Ingredients

  • 1 Cup Pumpkin Puree
  • ½ Cup Dark Brown Sugar
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • ½ tsp Ground Nutmeg
  • ¼ tsp Ground Clove
  • ½ tsp Ground Ginger
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 Large Eggs
  • ⅓ Cup Three Farmers Original Camelina Oil
  • 1 Cup Whole Wheat Flour
  • 1 ½ Cups Quick Cooking Oats
  • ½ Cup Raisins

 

Instructions

  • Preheat the oven to 350 degrees.
  • In a medium bowl combine the flour, oats, baking soda, baking powder, salt, cinnamon, ginger, clove and nutmeg.
  • In a large bowl combine the pumpkin puree, vanilla, eggs and the Three Farmers Original Camelina Oil.
  • Add dry ingredients to the wet and mix until combined. Add raisins and mix until combined.
  • Evenly distribute the batter into a 12 muffin tin and bake in the oven for 20 minutes.

Lentil and Oat Power Bites

(Makes about 24 bites)

 

Ingredients 

  • 1.5 cups toasted Rolled Oats
  • 1.5 cups Three Farmers Salted Roasted Lentils
  • 1 cup shredded, Toasted Coconut
  • 1 cup creamy Nut Butter of choice
  • 1 cup hulled Hemp Seeds
  • 1 cup Honey
  • 2 teaspoons Vanilla extract

For a Pumpkin and Chocolate Chip Variation:

  • Add 1 cup of Mini Chocolate Chips
  • ¼ cup of Pumpkin Puree
  • 1 tsp Nutmeg
  • 1 tsp Cinnamon

 

Instructions

  • Combine all ingredients together in a large mixing bowl.
  • Chill in the refrigerator for 2+ hours.
  • Form into bites or balls. Serve and Enjoy!
